Turkey Patties

Pan-fried turkey patties with flour, egg, and crushed red pepper. Cast iron and avocado oil. Five to six minutes per side.

Pan-fried turkey patties with a crisp golden crust and heat from crushed red pepper. Cast iron and avocado oil. Five to six minutes per side.

Ingredients

  • 3 lbs ground turkey
  • 2 eggs
  • ½ cup flour
  • 1 tbsp olive oil (mixed into the meat)
  • 2 tsp salt
  • 2 tsp crushed red pepper
  • ½ tsp garlic powder
  • Avocado oil (for the pan)

Equipment

  • Cast iron skillet

Method

  1. Mix all ingredients gently by hand. Do not overwork.
  2. Form into large patties.
  3. Heat avocado oil in cast iron over medium to medium-high.
  4. Pan-fry 5 to 6 minutes per side until deep golden brown and cooked through (165°F internal).

Notes

  • The 1 tbsp olive oil mixed into the meat is what keeps lean turkey from drying out.
  • Cast iron plus avocado oil is the combo that gets this crust. Non-stick will not do it.
  • 2 tsp red pepper across 3 lbs reads as confidently spicy, not punishing.
