Ingredients
- 3 lbs ground turkey
- 2 eggs
- ½ cup flour
- 1 tbsp olive oil (mixed into the meat)
- 2 tsp salt
- 2 tsp crushed red pepper
- ½ tsp garlic powder
- Avocado oil (for the pan)
Equipment
- Cast iron skillet
Method
- Mix all ingredients gently by hand. Do not overwork.
- Form into large patties.
- Heat avocado oil in cast iron over medium to medium-high.
- Pan-fry 5 to 6 minutes per side until deep golden brown and cooked through (165°F internal).
Notes
- The 1 tbsp olive oil mixed into the meat is what keeps lean turkey from drying out.
- Cast iron plus avocado oil is the combo that gets this crust. Non-stick will not do it.
- 2 tsp red pepper across 3 lbs reads as confidently spicy, not punishing.
