Mia's Chicken "Nuggets"

Chicken tenderloins, olive oil, salt, paprika, and flour. Fry until golden, about 5 minutes.

Ingredients

  • 2 to 3 chicken tenderloins, cartilage removed
  • 1 tablespoon olive oil
  • Salt, to taste
  • Paprika, to taste
  • 2 tablespoons all-purpose flour
  • Hot oil for frying; avocado oil preferred

Equipment

  • Cutting board
  • Fork
  • Paper towel
  • Bowl

Method

  1. Dry the tenderloins with paper towel.
  2. Put them in a bowl, coat with olive oil, season with salt and paprika, and mix.
  3. Add the 2 tablespoons of flour a little at a time. A sieve helps them get well coated.
  4. When the flour is in, the chicken will look like nuggets.
  5. Fry them in hot oil until golden, about 5 minutes.
  6. Drain on paper towel before serving.

Notes

  • If you put on too little paprika, Mia says it “looks too white” and she will not eat them. Use enough so they look like regular nuggets.
  • To pull the cartilage, grab it with paper towel, pass it between the tines of a fork, and pull the fork down. The chicken comes out a little wrecked, which is right for this recipe.
