Mia's Chicken "Nuggets"

Chicken tenderloins, olive oil, salt, paprika, and flour. Fry until golden, about 5 minutes.
Ingredients
- 2 to 3 chicken tenderloins, cartilage removed
- 1 tablespoon olive oil
- Salt, to taste
- Paprika, to taste
- 2 tablespoons all-purpose flour
- Hot oil for frying; avocado oil preferred
Equipment
- Cutting board
- Fork
- Paper towel
- Bowl
Method
- Dry the tenderloins with paper towel.
- Put them in a bowl, coat with olive oil, season with salt and paprika, and mix.
- Add the 2 tablespoons of flour a little at a time. A sieve helps them get well coated.
- When the flour is in, the chicken will look like nuggets.
- Fry them in hot oil until golden, about 5 minutes.
- Drain on paper towel before serving.
Notes
- If you put on too little paprika, Mia says it “looks too white” and she will not eat them. Use enough so they look like regular nuggets.
- To pull the cartilage, grab it with paper towel, pass it between the tines of a fork, and pull the fork down. The chicken comes out a little wrecked, which is right for this recipe.
